Diners can expect a new Corner View Restaurant menu that includes fresh, locally grown ingredients thanks to recently hired Chef Matthew Beckett. "We are switching to a three-menu-a-year format, which allows us to offer even more local seasonal food," said Patty Carpenter, co-owner of Corner View Restaurant. "We've been looking for the right chef for awhile and we are very excited to have Chef Matthew Beckett with us. He does beautiful food." Beckett has become one of the premier banquet chefs in San Luis Obispo and was excited to create the new Corner View menu and bring his food to the public. The menu changes reflect the added culinary experience of Beckett and his ability to craft a menu that provides excellent food while focusing on reasonable prices.
"We're introducing a wild salmon with a miso glaze and jasmine rice. Which is very different from Corner View offerings in the past," Beckett said. "Even the salads are going to be seasonal. For example, we're going to have a summer salad with fresh fruit." Beckett apprenticed at the Ritz Carlton in Laguna Niguel under international award-winning Executive Chef Christian Rassinoux. He also served as the Executive Chef of the San Luis Obispo Country Club for almost 9 years. Staple dishes like Sandabs will not go away and the new menu he is creating will include fresh, local seafood and what is in season, Beckett said. In addition to preparing delicious meals for up to 50 guests in our upstairs mezzanine, Corner View will now offer outside catering for weddings and special events.
